Bean and vegetable soup
Contributing to the proliferation of used-and-then-abandoned web logs, this blog is going to chronicle my experiences living alone in the city during the summer of 2004.
I'm mostly going to talk about what I cooked for dinner, and other random happenings around the flat.
For dinner tonight, I cooked a bean and vegetable soup to be served with tomatoes and olive oil and crusty bread (from Trader Joe's, rock!).
Soup:
Soak beans in some boiling water for about an hour to soften them. Fry a couple strips of bacon in a clean saucepan/small pot. When all the fat has rendered out and the strips are crispy, pour off some of the fat so that there won't be a pool of pork fat floating on top of the soup. Put frenched onions (thinly sliced), diced celery and carrots in to pot to "sweat"/sautee. If you've got some potatoes, cube them and add it to the mix. Add some salt and pepper to taste. When the onions and celery are almost tender, pour the soaking beans, liquid and all, into the pot. Add enough water/wine/beer/broth/liquid to cover (or more, for more soup). Cover and once boiling, turn down the heat. Cook until beans are soft.
Serve with bread and salad.
