An amazing sandwich
If you've never had roasted tomatoes and bell peppers on pita with hummus and parsley, you are seriously missing out on some good eatin'.
Hummus is really simple. Take a can of canned chickpeas, drain the water and mash up the chickpeas with a fork. It doesn't have too be too smooth since the other ingredients will lend a very nice smooth texture to it.
Add to the chickpea paste a generous amount of garlic (two or more cloves, at least), a large lemon's worth of juice, and a good pour of olive oil. Mix and serve immediately with warm pita and other fixin's.
The roast vegetables is also pretty simple, but you have to periodically check up on them lest they burn your kitchen down. In a roasting pan, add some quartered tomatoes, scallions cut into quarters, red bell peppers sectioned roughly, and crushed garlic cloves. Give everything a dash or two of salt, a generous dusting of black pepper, and a squeeze of lemon juice. Be generous with the lemon juice, but don't drown everything in it. Pour in some good e.v.o.o, and combine to coat everything.
Put it into a hot oven (300F) for about 2-3 hours. Everything is done when the juice has seeped out, and then reduced. Things should be slightly shriveled.
