Andrew's Chickpea Masala & Rice & Yogurt
fry 1 large onion and lots of garlic (a good 3-4 cloves) in 1 T oil
add salt, pepper to taste, 1 to 1.5 Tsp cumin powder
fry until translucent
add tomatoes (I put in about 5 small tomatoes) chopped coarsely
let simmer for a minute or two (until tomatoes heat up, basically) and then add 1 can of drained chickpeas (drain them until the thick stuff starts coming out--you want that)
I also added about 1/4 cup water to thin things down a little bit--it is still quite thick.
at the very end, I added a good 1 heaping teaspoon of garam masala and chopped fresh chilies.
to make this more authentic, I think it would be wise to add in some plain yogurt and water before you add the tomatoes. I will have to consult some friends on that one.
