Quick and easy lunch

1/2 of a roasted bell pepper (red, green, yellow are all ok)
1 strip of bacon, chopped and fried or
a couple of anchovies, chopped
a couple cloves of garlic

freshly cooked pasta

Heat some olive oil in a frying pan, and lightly fry the chopped garlic. Put the peppers in the oil to warm them up. Add some of the hot/warm oil in the frying pan to the cooked pasta. Mix to coat. Give the pasta a liberal dusting of black pepper (freshly ground, if possible) and parmesan cheese. Add the chopped bacon or anchovies to the pasta, and top with the warm, roasted bell peppers.

Super yummy, and super quick and easy.

Cucumber and Radish Salad

A simple, refreshing salad for those muggy, hot summer days. Perfect with a light sandwich or some cheese and crusty bread.

A cucumber, sliced into very thin rounds. I used a cheapo grater with a slicing/pseduo-mandolin blade.

A handful of radish, sliced thinly, as well.

A couple cloves of garlic, chopped finely.

A diced tomato. I used half a Roma tomato, but you can use one whole tomato.

A splash of vinegar (any kind of vinegar will do--I used plain old white vinegar).

A nice long stream of good extra virgin olive oil.

One chopped up scallion. Some diced onion (red or whatever) would have been good too, but I was rushing to get dinner made.

I suppose some chopped parseley would have been good, but I didin't have any on hand. (Blame the small refrigerator.)

Combine and add some salt and pepper to taste. Chill.
