Yet Another Quick Pasta Recipe: Tortillini with tomatos, onions, olives, and feta cubes.

Ok, I couldn't think of a more creative title for this, but it's very tasty and easy to make.

Materials:
Tortillini
2-3 Tomatos
1/2 Medium onion or 2-3 scallions (or more)
Feta cheese
Kalamata olives
Olive oil
Salt and Pepper

Chop up a couple tomatoes, and reserve the seeds/juice (you don't want this to be too soggy; you can use the reserved tomato seed/liquid for stock or, if you're like me, drink it up). I suggest a little more, because I love tomatoes. Dice some red onions, or, alternatively, chop up some scallions (I used two, but you can add more, if you like).

Cook tortillini, per directions on package. (My first experience cooking tortillini turned out well--I salted the water, and cooked the pasta for approximately 13 minutes at medium-high heat.)

While the pasta is cooking, fry the onions briefly in some olive oil, to reduce their bite, and then, with the heat off, warm the chopped tomatoes. Lightly salt, and pepper. When the pasta is done, toss them into the pan with the tomatoes. Toss, and add cubed feta, and kalamata olives. Plate and enjoy!

I have no idea if this dish is authentic, but what the hell. It tasted good, and it had lots of tomatoes!
